Dolmàdes

Dolmàdes with grape leaves

(for 5-6 persons).

 

Ingredients

 

 ½ Kg of grape leaves

 

but can be substituted

 by zucchini flowers or cabbage leaves

½ Kg of rice

2 onions

fresh tomatoes

2 cups of olive oil

 1 lemon

parsley

thyme

mint

cumin

salt, pepper

Preparation

 

We boil the grape leaves for some minutes to make them soft. We drain them and we prepare the filling.

 

We put the rice in a bowl, we finely chop the onions and the tomatoes and we add them to the rice together with the spices.

 

In some versions you can also add a potato and a couple of zucchini, all finely grated.

 

We fill every leaf with some of this filling making small rolls and we carefully lay every roll in a high edge pot, one next to the other making various layers.

 

We cover with a plate, to press them and we add water till they are covered and the oil. We leave them cook, with a lid, until they are cooked (about ½ hour).

 

When they are ready, we remove the pot from the fire and we add the lemon juice.
