Ingredients
1 kg pasta if possible "Zite"
for the meat sauce : 2 onions, ½ kg beef minced meat, olive oil, 1 kg tinned tomatoes, salt, pepper, grated nutmeg |

for the cream sauce :
2 eggs, 50 gr butter, 130 gr flour, 8 dl milk, salt,
grated mozzarella and parmesan cheese |
Preparation
We start with the meat sauce, we finely chop the onions and we put them in a pan with the olive oil and the minced meat until golden brown. At this point we add the tomatoes, the nutmeg, the salt and the pepper. When it starts to boil, we reduce the heath, and we leave it cook for about one hour.
Now we prepare the cream sauce, in a pot we put the butter, when melted we add the flour and the milk and a little salt, and we keep stirring until smooth, when it starts boiling we take off from the stove and we add, very slowly in order not to make them cook, the beaten eggs and some of the grated parmesan cheese.
We boil the "Zite" in salted water and we drain them when "al dente".
Now it is time to put the dish together : in a buttered baking pan we dispose a first layer with half of the pasta, then a lawyer of the cheese mix, then the meat sauce, we remaining of the pasta, we pour all over the cream sauce and we on top the rest of the grated cheese mix.
We put it in the oven untill golden brown and all the cheese has melted. |
